Cooking Class / Chorizo, Pumpkin & Tomato Pasta Plus Chicken On Spinach & Cream

We finally cooked a proper dinner!  I think it’s probably been a month and a half since we cooked properly.  I was waiting to feel like cooking properly but it didn’t come – so I just had to push myself to do so.

When we were in Japan, a friend of mine who teaches cooking, twice invited us for a meal at her home and these are 2 of the many dishes that she served to us. She taught both of them at an online cooking class (we were in Japan when she taught these so I watched her video after we got back home).

One of them is “Chorizo, pumpkin & tomato short pasta”.  She taught this at an Instagram cooking class.  I ordered an Italian “Delica” pumpkin from Ocado, (the online supermarket we regularly use).  I did buy the same pumpkin a couple of times last year during the season, but I didn’t find them so good to be honest, specially in soup.  This time I used it in this pasta sauce and it worked well.  I didn’t find it as sweet as pumpkins in Japan but at least the texture was nice.  The pasta used is called ‘radiator’ in Italian.  It was very tasty.

The other dish we cooked was “Grilled Chicken on Spinach In Cream”.  Although it says “grilled” it’s actually cooked in a frying pan.  She taught this dish at her “French & Italian Course” that she runs once a month.  We used Swiss Chard instead of spinach.  Swiss Chard keeps the crispy texture so it doesn’t work in the same way as spinach but we enjoyed that texture.  You pour a sauce that has lemon rind and capers over the chicken before you eat.  It was a bit different from anything I knew of before but very nice.

The recipe said use 70g of pasta but it seemed too little and we cooked twice this quantity – and it was too much!  We got full just from eating the pasta course.  So we just had a very small quantity of this chicken dish and have quite a lot left – so we’ll have it tomorrow.
