Vegetable Curry


Tonight’s dinner was Vegetable Curry.  It’s something between Indian and Japanese curries.  I sautee onion with spices, then add tomato and stir more.  Then add chicken stock, water and vegetables.  When the vegetables are nearly done I add some Japanese curry roux, cook it a little and it’s done.  It’s not very thick because I don’t add a lot of roux.  Quite spicy.
