Vegetable Curry


Today’s dinner was Vegetable Curry.


I cooked an Indian vegetable curry a couple of weeks ago, but I made too much.  I don’t usually freeze things with vegetables (specially carrots, I don’t like frozen carrots) but there was so much left that I didn’t want to waste it so I put it in the freezer.  I used it today, added water, a potato and a small sweet potato, cooked until tender, then added Japaense curry roux.  It was a little more acidic than normal Japanese curry (because of extra tomatoes) but it was good.





There is still some left, so my lunch tomorrow will be this curry again.  Japanese curry is one of few things I enjoy on the following day; I don’t normally like eating left-overs.
