Tray Baked Pork Chop (Jamie Oliver)

今日夫が作ってくれた夕食は、Jamie Oliverの『The Return of the Naked Chef』 から、「Tray-baked pork chops with herby potatoes, parsnips, pears and minted bread sauce (トレイで焼くポークチョップ、ハーブたっぷりのポテト、パースニップ、洋梨、ミント入りブレッドソースと共に)」。なのですが、ポークチョップは低温調理器(Anova)で火を入れて、お野菜(ポテトとパースニップ)と洋梨はベーキングトレーに入れてオーブンで焼いてくれました。色が悪いのであまり美味しくなさそうですが、洋ナシもポテトもパースニップも甘くなってハーブも効いていて美味しいです。

The dinner my husband cooked tonight was “Tray-baked pork chops with herby potatoes, parsnips, pears and minted bread sauce” from Jamie Oliver’s”The Return of the Naked Chef” except that he cooked the pork chops in Anova (Sous Vide) separately from the rest.  As it’s all brown it doesn’t look very appetising but the pear and the potato & parsnips are sweet and herby and the bread sauce is such a great addition, we like it.


However, by some reason, one of the pork chops was very red inside.  Mine was just pink but my husband’s was too raw for us to feel comfortable with eating (he ate some but then found it too red), so we halved mine.  The last time when he cooked pork chops they were thoroughly cooked and he followed the same time and temperature so we don’t know why it was raw and also why one is more cooked than the other.  Maybe we should try different recipes – some uses lower temperature and cook them much longer.






I really like his bread sauce.
