Cumin Scented Tomato Soup And Chicken, Mango & Avocado Salad


Today’s dinner was Cumin Scented Tomato Soup and Chicken, Mango & Avocado Salad.


I made a full amount of the recipe last time and froze the left-over, so all I did was defrosting and warming it up.





Salad has chicken breast (marinaded in garlic, lemon juice and olive oil then cooked on both sides then in the oven), mango, avocado, salad leaves, coriander leaves, mint and dry-roasted sliced almond.  I used mango vinegar and special olive oil a friend gave me that she bought in Spain.  Chicken breast was so large, there is some left-over.
