A Few Salads For Dinner


For a certain reason, I wasn’t able to get what I needed for dinner today, so I had to make a change.  I was planning to get white asparagus and make a few salady things to go with it, but no white asparagus, just salads.




Again, for a certain reason, we happen to have loads of San Danielle ham, so we had to eat some of it.  There was also some mozzarella left from last night and I just added tomatoes.  I found basil in the fridge that I didn’t know we had.



Couscous salad.  As well as couscous, I used tomato, onion, yellow pepper, cucumber, coriander leaves, lemon juice, salt & pepper.  I didn’t use olive oil as I quite like it without for this salad.



Carrot salad.  I made this early in the day so the seasoning will penetrate through the grated carrots.  Just lemon juice, salt, pepper and coriander leaves.



Potato Salad.  I do love Japanese style potato style, which is roughly mashed potato with Japanese mayonnaise and some vegetables.  However, I love this one, too.  Just boiled new potatoes, salt, pepper, lemon juice while the potatoes are still piping hot.  Then add some chopped onion (I prefer red onion is it looks pretty but there was a small piece of ordinary onion left over in the fridge so I used it), chopped cornichons. Sometimes I add some caper but not today.  I like it quite lemony.  I also add a little olive oil at the end.



It was a shame I couldn’t get white asparagus, but it was still a good selection of salads.  I remember I used to make a salady dinner often in the summer in Japan and also in Hong Kong but I seem to have sort of lost it because there is no season here.  I try to remember what sort of salads I used to make but I only remember the potato salad.  I asked my husband if he remembered any and he said “Pasta Salad”.  I used to use small shell shaped pasta for a salad, I now remember that.  Anyway, I do like this sort of a meal – no main dish, just a few different salads, and I’m happy my husband also loves them.
