Moroccan Beef Tagine


It has been a stressful few months but things have settled down, I thought, but then something else came up that worried me a lot.  Today I found out there is no worry, so I am very relieved and hopefully now things are going more or less “normal”.


I cooked slow-cooked beef for the first time in a long time.  I used to cook this sort of dinner often because they are easy to do, look special and we both love slow-cooked beef or pork.  However, a couple of years ago I started making an effort to reduce the intake of beef and pork.  My husband often cooks something meaty on Saturdays so I don’t have a lot of opportunity to cook meaty dinners myself any longer.  This last Saturday he cooked chicken and I have been a bit fed up with cooking chicken, so I decided to do slow-cooked beef today.

モロッコ風のスパイスを使った Jamie Oliver のレシピです。モロッコ風のミートボールは時々作りますが、ビーフの煮込みはとても久しぶり。レシピにはビーフの他にプルーンとバターナッツスクウォッシュを使っていますが、今日はポテトとドライのアプリコットも加えました。他にコリアンダーを入れたクスクスと、人参とオレンジとスライスアーモンドのサラダ。ご飯と迷いましたが、モロッコ風のビーフなのでクスクスにしました。

I used Jamie Oliver’s Beef Tagine recipe.  I still cook Moroccan meatballs now and again but haven’t cooked this stew for a long time.  As well as beef, prune and butter nut squash is used in the recipe but I added potato and dried apricots as well and served it with couscous and a Coriander, Carrot, Orange & sliced Almond salad.  I thought about cooking rice but in the end I used couscous.
