Soup & Salad (Cumin Flavoured Tomato Soup And Chicken, Mango, Avocado & Almond Salad)





Today’s dinner was Soup & Salad. Soup was Cumin flavoured tomato soup.  Salad was Chicken, Mango, Avocado & Almond Salad.  Some days go I bought 4 avocados and have been letting them ripen.  I had 1 yesterday for a sandwich and it was very good so I thought now was the chance to make my chicken, mango, avocado & almond salad.  However, one of the remaining avocados was completely black, one was over-ripe and had some black parts, and the third one was under-ripe but just about edible.  It’s so hard to get hold of good avocados here.

At least I didn’t forget anything for the salad today, though.  It has chicken (marinaded in garlic, lemon juice & olive oil then seared in a pan and cooked through in the oven), mango, avocado, romaine lettuce, rocket leaves, coriander leaves, mint, and sliced and toasted almonds.  I made the dressing with mango vinegar, lemon juice, olive oil, salt, pepper and a little sugar.
