Honey Mustard Chicken Breast


Today’s dinner my husband cooked was “Honey Mustard Chicken Breast“.  The sauce had wine vinegar and apricot jam as well as honey and mustard so it was sweet and sour.  As the recipe doesn’t have a recipe for “honey mustard” my husband searched online and made it with honey, Dijon Mustard, mayonnaise and vinegar.  The sauce is very sweet so you only need a little.  Chicken was very tender and delicious.  He put it on a bed of sweet potato mash and served with broccoli.  Sweet potatoes are orange ones from Australia rather than Japanese, for mashing I think these work better because it has more moisture.
