Soup & Salad (Costa Rican Black Bean Soup And Chicken, Mango & Avocado Salad)

今日の夕食は、スープとサラダ。スープは Jamie Oliver のコスタリカ風ブラックビーンスープ((卵は入れていません)。夫が今一番好きなスープで、簡単でおいしく満足感もあり体にも良さそう。

Today’s dinner was Soup & Salad.  Soup was Jamie Oliver’s Costa Rican Black Bean Soup (but no egg).  It seems to be my husband’s favourite soup at the moment.  It’s easy to make, tastes great and I think very good for you, too.

サラダは我が家定番のチキンの胸肉、マンゴー、アボカドのサラダ。チキンはにんにく、レモン汁、オリーブオイルにマリネしてから両面にさっと色がつくくらい焼いて200度のオーブンで10分ほど火を入れています。他にはサラダ菜類、ミント、シャンツァイ、スライスアーモンドを乾煎りしたもの。ドレッシングは最近気に入ってよく作る、つぶつぶのマスタード、はちみつ、レモン汁、オリーブオイル、塩胡椒のドレッシング。

Salad is one of my favourites – Chicken breast, mango, avocado salad.  Chicken breast was marinaded in garlic, lemon juice & olive oil, patted with kitchen towel, seasoned with salt & pepper, cooked just both sides in a frying pan then 10 minutes in the oven at 200.  Always comes out moist and tender this way.  I use lettuce leaves, mint leaves, coriander leaves and some dry roasted slice almonds as well as chicken, mango & avocado.  The dressing is made with salt, pepper, lemon juice, Japanese grain mustard (not spicy, just adds some texture), honey & olive oil.
