I used to love getting Tonkatsu from Ginza Bairin by Deliveroo because it was so crispy and tender, better than I can cook myself.  Sadly they closed down sometime ago so I have no choice but cooking it myself.


I always cook too long (as I hate the idea of under-cooked pork) and I did today.  I sandwiched Shiso leaves (steak leaves) in some of them.
