Costa Rican Black Bean Soup



Today’s dinner was Jamie Oliver’s Costa Rican Black Bean Soup.  I did make the topping as well today (I omit it now and again –  but no egg).  My husband loves this soup.  For him, I also prepared a starter of smoked salmon (plus onion, dill, caper & lemon juice).  Although the recipe says cook it with low heat for 30 minues, I cook it for about an hour and also put about a half of it in a food processor to lightly mash.  I find if I don’t it lacks the depth of flavour.
