Black Bean Soup & House Salad


Today’s dinner was Soup & Salad.  As we’ve been eating out a lot, I was craving for a nice salad.  When we come back from a holiday I often crave for something spicy and Asian like Thai food or this type of salad.


I defrosted left-over black bean soup.  For salad, I just used what I found in the fridge and also some Finoccio salami.



What I used for the salad was small salad potato, tomato, carrot, red & yellow pepper, cucumber, onion, butter bean, Parma ham and added Finoccio salami and a salad leaf mixture.  I wish we had an avocado as well.



When I make this type of a salad, even though I use a small quantity of each ingredient, the total volume becomes too much for the two of us.  There is about 1/3 of the soup and 1/3 of the salad left but my husband is happy to take it for lunch tomorrow.
