House Chicken Salad

少し前にカフェのサラダをインスピレーションに作ったチキンのサラダを夫が美味しい、美味しい、と食べていたので今日の夕食に同じサラダを作りました。

I made the House Chicken Salad I made a couple of weeks ago as my husband loved it.

入っているのは、チキンの胸肉(2枚、ニンニク、レモン汁、オリーブオイルでマリネして焼いたもの)、かぼちゃ(レンジでチン)、玉ねぎ、人参、トマト、アボカド、ビーツ、ビーツのピクルス、枸杞の実、かぼちゃの種、ロメインレタス、ロケット。

I used 2 chicken breast (marinated in garlic, lemon juice & olive oil as I often do then cooked in the oven), Japanese kabocha (microwaved it), onion, carrot (grated long), tomato, avocado, beets (cooked one, thick slices), pickled beet, goji berries, pumpkin seeds, Romain lettuce, rocket leaves.

チキンとアボカドがたっぷり入っていますしかぼちゃも入っているので、しっかり満足感があります。

There is a good amount of chicken and avocado and also Kabocha (Japanese pumpkin), so it’s very satisfying as a meal although it’s just a salad.
