Fine Dining Bakery

We went to “Fine Dining Bakery” today as it’s been the topic that has been coming up amongst my friends.  My husband wanted to see what the bakery is like so we decided to go there for lunch today.  As I wrote before, this is a bakery run by a Japanese who baked bread at Robuchon and BENI.

The eating area is small but it was not busy so we were able to have a table without problem.  You order and pay first where the cashier is.  I was going to order egg sandwich made with fluffy bread but it was already out of stock (well, the fluffy bread was still available so I don’t know why this sandwich was out of stock, did they run out of eggs?) so we both had Ham & Cheese Baguette sandwich.  I think the baguette is the one for white wine (unless it is made specially for these sandwiches).  It’s quite firm and very crispy outside, we enjoyed it.  I forgot to take a photo but it came with a small glass of pumpkin soup.  The set each was S$18.80.

Of course we also bought some bread to take home.

Fluffy Shokupan (white bread) is very popular in Japan, you are supposed to have it without toasting, it’s fluffy, a little chewy and sweet.  They also have white bread for toasting, sourdough for meat (they say it goes well with meat because it contains 60% of rye flour).

They also have milder sourdough, which is supposed to go well with fish.

Baguette for red wine (it contains some rye flour) and baguette for white wine.

“Magic of the moon”  – made with Hokkaido flour, they have plain ones and the ones with walnuts.  Then raisin butter sandwich.

Croissant and almond croissant.

I think that is all they have.  The shop was smaller than I expected, it’s quite a small shop with a small eat-in area with some chairs and tables.

The names/description of each type of bread are very interesting.  Baguette for red wine is quite firm inside, I think I prefer the one for white (that has more air pockets).  We bought “Magic of the moon” so I’m looking forward to trying it tonight.

Although it was quiet today, while we were having lunch, quite a few people came in to buy bread – both Singaporean-looking people and Japanese.  Singaporeans tend to love “new shops” and they tend to move onto the next new shop after a while but I hope they’ll keep going back to this shop.  In Singapore, I find many cafe/restaurants serve good food at first but then the quality goes down (often because the people who taught they how leave after a while), but at least this would not happen at this place as the owner bakes the bread.
