Roasted Vegetable & Couscous Salad And Chicken Breast

今日夕食は、お野菜たっぷりのロースト野菜とクスクスのサラダ。Delia Smith のレシピですが、多少アレンジしています。ローストしたお野菜は、玉ねぎ、トマト、ズッキーニ、茄子、赤と黄色のパプリカ。クスクスの周りにサラダ菜類をのせて、クスクスの上にロースト野菜をのせています。チキンはいつもの胸肉をニンニク、レモン汁、オリーブオイルにマリネして焼いたもの。どちらも上からシャンツァイをのせています。ソースは、クミン味のピリ辛ソース。

Today’s dinner was Delia Smith’s Roasted Vegetable & Couscous Salad with chicken breast.   Although I generally follow her recipe for the base, I have made some changes to suit us.  The vegetables I roasted today were onion, tomato, courgette, aubergine, red & yellow pepper.  I put couscous in a large glass bowl, put some lettuce leaves around the couscous and then put the roasted vegetables on top.  Chicken breast was cooked after marinading in garlic, lemon juice & olive oil.  The sauce is a little spicy with cumin flavour.
