Minestrone Soup



For dinner today, we cooked Minestrone soup with what we had at home. Today, I was the chef and my husband was the sous chef.

We used onion, garlic, celery, carrot, potato, butternut squash, passata, and bay leaf. After serving in a bowl, we grated some Parmesano Regiano, scattered a little olive oil and some freshly grated black pepper. It turned out very good. The only thing is that the butternut squash is really tasteless, not sweet at all. I wish we were able to get hold of Japanese pumpkins.
