Creamy Steak and Mushroom Stroganoff

Today’s dinner was “Creamy Steak and Mushroom Stroganoff” from Hello Fresh.  I find ingredients from Hello Fresh in general very fresh and good quality except beef, I find their beef strips always too tough for my liking.

I used to cook beef stroganoff often in Japan soon after we got married, but I haven’t cooked a lot of dishes that call for cream for a long time because I try not to cook something very high in calories or full of animal fat, so I haven’t cooked beef stroganoff for a long time.  First you lightly fry steak strips, take them out, then add mushrooms, shallot and garlic and fry for a few minutes before adding paprika.  When paprika gets mixed well, add water, wine vinegar (it was apple vinegar today) and sour cream and cook it down a little, then add the beef back, add parsley and it’s done.  It came with rice but we used the rice that we froze the other day.

As I say, the beef is too tough for our liking and as I’m not a big fan of sour flavour I would have added less vinegar, but it was very tasty.  I should have reduced the liquid a little more. I like things quite saucy when we have it with rice as the rice soaks the sauce up but it would have looked better if it was thicker.
