Sweet Potato & Red Pepper Soup

ランチが結構ボリュームがあったので、夕食は軽めに(と言ってもココナッツミルクが入るので結構お腹は膨れます)スープにしました。さつまいもと赤パプリカとココナッツミルクのスープ。玉ねぎと炒めて赤パプリカを加えて更に炒めて、タイレッドカレーペーストを加えて香りが出たらさつまいも(こちらのは水っぽくてあまり甘くない)を加え、ココナッツミルクの小さなパック1つとお水を適当に加えて、塩胡椒して、サツマイモが柔らかくなるまで煮て、ブレンダーにかけて出来上がり。

As the lunch was quite filling, we had just soup for supper (but it’s also quite filling because of coconut milk).  It’s sweet potato & red pepper soup.  I sautéed onion first, then added red pepper and sautéed for a good few minutes, then added Thai red curry paste.  I sautéed it until the paste is cooked well then added sweet potato slices (what you get here aren’t very sweet and quite watery), a small pack of coconut milk, water and salt & pepper.  When the sweet potato is soft, I put it all in a blender to make it smooth.
