Chorizo, Potato, Poached Egg, Balsamic Vinegar Salad


Today’s dinner was Hot Salad of chorizo, potato & poached eggs with Balsamic vinegar dressing.  I’ve written the recipe here before if you want to see it, but we now sautee vegetables (oinon, garlic & pepper today) separately from the chorizo and roast potatoes in the oven as we find it easier.  The chorizos we get here don’t have as much flavour as those we used to get in Hong Kong so I added a little paprika when I made the dressing in a hot frying pan.  We failed again to make poached eggs in the microwave but it was still very good.  I love the combination of cold and crispy lettuce with hot potato, chorizo, onion and sweet dressing.
