Coconut Cookie


On Wednesday next week, a couple of our neighbours are coming to us for a coffee morning gathering, so I decided to bake Canelé, which I haven’t baked for a long time and for the first time in England.  The batter for Canelé needs to sit in the fridge for 4 days so I needed to prepare it today.  It uses egg yolks as well as a whole egg so there was egg white left – so I decided to bake some coconut cookies using it.  These use just egg white, sugar and coconut.


35g egg white, 40g granuated sugar & 80g grated coconut.  Since there was 70g of egg white left from making the Canelé I doubled the quantity.  I think you are supposed to make small balls and bake them but as there was quite a large quantity I made them large and a flat-ish round shape and baked for 30 minutes at 150C, then turned the oven off and let it cool.  It wasn’t as sweet as I thought, but very crunchy and moorish.
