Minestrone Soup


Today’s evening meal was Minestrone, using things that we had at home.  We used garlic, onion, celery, carrot, potato, green beans, fresh tomatoes, cabbage, Kayanoya’s soup stock powder (organic), oilive oil,  a little miso (for the depth of flavour) and Parmesan cheese.  We usually use tinned tomatoes for this soup but today we used fresh tomatoes, so the soup was quite light.   It was also sweet from all the vegetables.
