Pasta With Summer Vegetables In Tomato Sauce


Today’s evening meal was Pasta with summer vegetables in tomato sauce.  When we cooked roasted vegetables with couscous a little while ago, there were some roasted vegetables left over so we froze it and used it today in the sauce.  All we did was sauteeing garlic and chilli flakes in olive oil, poured in a tin of cherry tomatoes, added a little salt, pepper and sugar (because it was too sour) and reduced it down a little, then added the defrosted roasted vegetables.  Some Parmesan cheese on top after plating.  It was very easy to cook but tasty.
