旅先でそこのお料理を習うのが好きで、これまで色々なところでお料理教室に参加しましたが、今回は自由な時間があまりなかったのでエクスカーションにお料理教室が含まれているものに申し込みました。お料理教室は、素敵なヴィラの素晴らしい景色のお庭で行われました。お料理教室とは言ってもデモンストレーションで実際の作業はありません。実際にお料理した方が覚えられるという利点はありますが、デモンストレーションだけでもレシピさえ頂ければ満足する方です。
We love taking cooking classes to learn the local cuisine when we travel and we’ve taken quite a few in various places, but this time we didn’t have a lot of free time so we chose an excursion that included a cooking class. The cooking class was in the garden of a lovely villa with a wonderful view over the sea. It was just a demonstration, no actual cooking by us, but I don’t mind as long as we can see the actual cooking and get the recipes.



昨日のお料理教室で習ったのは、まさにギリシャ料理と言えば、な、ザジキ(ツァズィキ、と聞こえます)、グリークサラダ(もちろんギリシャではそうは呼ばず、単にサラダ)、ムサカ。デザートはバクラバの筈でいただいたレシピもバクラバのレシピでしたが、ランチで出されたのはハルヴァというセモリナ粉のデザートでした。バクラバは作るのが大変だとおっしゃっていました。
What we learned at the cooking class was a very typical Greek menu – Tzatziki, Greek Salad (although of course in Greece they just call it a salad) and Moussaka. The dessert was supposed to be Baklava, but they served us Halva, which is a sweet made of semolina, I guess because Baklava involves too much work.

ザジキ。ぽってりと濃いギリシャヨーグルトにお塩、ニンニク、きゅうりの細切り、お酢(好みで入れなくてもオーケー)、たっぷりのオリーブオイルを加えて混ぜて、上にディルとオリーブを飾ります。お肉料理の付け合わせなどにしますが、昨日はパンの上に乗せていただきました。
Tzatziki. You add salt, garlic, grated (or thinly sliced) cucumber, vinegar (if you like), plenty of olive oil with very thick Greek yoghurt, a little dill and some olives on top. It’s usually served with grilled meat but yesterday we had it on slices of bread.
わたしは乳製品独特の味や香りが苦手なのですが、お塩やニンニクを加えると美味しくいただけるので、このザジキも美味しくいただきました。パンもとても美味しいパンでした。
I don’t like the smell or taste of dairy very much but salt & garlic softens that taste so I can enjoy it and I did enjoy this very much. The bread was also excellent.



グリークサラダ。シンガポール・ヌードルやイタリアン・ドレッシングやフレンチドレッシングなどと同じで、グリークサラダもギリシャでは単にサラダ。季節や場所によって中身は変わるそうですが、昨日使ったのはフェタチーズ、トマト、玉ねぎ、胡瓜、グリーンパプリカ、オリーブ、お塩、お酢、オリーブオイル。
Greek Salad. Just like Singapore Noodles or Italian dressing or French dressing, it isn’t normally identified by its location name in its home location, it’s just “Salad” in Greece. What you use depends on the season and the place, but yesterday they used feta cheese, tomatoes, onion, cucumbers, green pepper, olives, salt, vinegar & olive oil.
レモンがたくさん出来る土地なのでもっとレモン汁を使うかと思っていましたが、意外と普通にお酢でした。わたしはお酢よりレモン汁が好みですが、お酢の量はそれほど多くなくお塩の量も完璧で美味しかったです。
As a lot of lemons grow here so I thought they would use lemon juice but they just use vinegar. I personally prefer lemon juice to vinegar, but she didn’t use too much vinegar and salt level was just perfect as well.

メインのムサカ。ムサカは手間がかかるお料理なので、特別なお祝いの日に食べることが多いそうです。手順が多いので、2日に分けて作るとおっしゃっていました。
The main was Moussaka. Moussaka is very time consuming so it’s something you eat on a special celebration day and you take 2 days to cook because there are a lot to do.
ムサカは夫も結婚した当時からディリア・スミスのレシピで作ってくれていますが、彼女のレシピではポテトはなく、茄子を焼いたものの上に玉ねぎとラムのミンチを炒めてトマトペーストとスープストックで煮たもの(トマトのパッサータや缶トマトは入らない)をのせて、その上にベシャベルに卵を加えたようなソース(ふわっと出来上がります)をのせてオーブンで焼くもので、昨日食べたものとは違います。他のレシピでもイギリスではポテトは使わず茄子だけになっています。
My husband has cooked Mousska on many Saturdays since we got married, he’s always used Delia Smith’s recipe. Her recipe uses aubergine, cooked onion, minced lamb, tomato paste and soup stock (no passata, just tomato paste) – but I asked my husband to use tin tomato so it’s more like ragu you use for pasta when he first cooked it – and bechamel sauce with egg (so it puffs up) – it’s quite different from what we had yesterday. I think many recipes used in England have only aubergines, and no potatoes (although people used to use potatoes instead of aubergines before they were widely available).
ムサカはイギリスに留学していたときにホストマザーが時々作ってくれていましたが、ポテトの上に玉ねぎと牛ミンチを炒めたものをのせてベシャベルソースをかけていました。他のイギリスのレシピも当時はそういうものが多かったと思います。
My host mother used to cook Moussaka when I lived in England to learn English all those years ago and she used potatoes, mixture of onion & mince beef & bechamel sauce.
昨日、いただいたものは、ポテトを軽く焼いたもの、茄子を軽く焼いたもの、ラグー(ミートソース)のようなもの、ベシャメルソース、チーズ、の層になっていました。ラグーのようなものにはパッサータが入っているので、日本でいうミートソースに近いものでした。家庭料理なのでそれぞれの家庭で違うのかもしれません。
What we had yesgterday had a layer of potatoes, a layer of aubergines, a layer of ragu (mince beef, onion, passata, wine) then a layer of bechamel, and finally a layer of cheese. The ragu had passata so it was very much like what we would call “Bolognase sauce” for pasta just like what my husband has been cooking. I guess differfent families make it differently.
ラグーに使う典型的なミンチは牛ミンチとラムミンチの合い挽きとのことでしたが、幸い昨日は牛ミンチだけを使っていたので、わたしもいただくことが出来ました、これもとても美味しかったです。
Typically, people use a mixture of minced beef and minced lamb but fotunately for me they used just minced beef (as I don’t like lamb) so I was able to enjoy it and it was very tasty.



デザートのハルヴァ。固まってはいなくて口に入れると粒がバラバラになって、クスクスのような食感です。セモリナ粉とスパイスと蜂蜜で作られたシンプルなものとのことでした。ヨーグルトと金柑のマーマレードと一緒に出されました。
Dessert, Halva. It’s not solid and when you put some in your mouth, you can feel each grain, like couscous. We were told that it is a simple dessert made of semonlina, spices and honey. It was served with yogurt and kumquat marmalade.

ヴィラの猫ちゃんが、食べ物をねだりにうろうろしていました。
The villa’s cat was walking around under the tables to beg for food.

お隣に座った方に食べ物をねだっているところ。逆さまなのは背伸びをして顔を上げているから。
I know this looks strange but the cat is trying to climb on the knee of the lady next to me asking for food.

昨日はエクスカーションであまり歩かず、夜までに5000歩までしか行きませんでした。
We didn’t walk very much at the excursion so I walked only about 5,000 steps.
