今日も、夕方1分くらい雨がぽつぽとしましたが、概ね良いお天気でした。気温は21度くらいとなっていましたが、我が家の温度計では25度くらいになっていました、でも涼しくて25度とは思えませんでしたが。。。
It rained slightly for a minute or so in the evening but other than that it was good weather again. The temperature was 21C on the weather application but our thermometer showed 25C. I must say it didn’t feel as warm as 25C and am not sure if our thermometer is correct, it’s often higher than the weather application shows.
今日の夕食は、YouTubeで桐島カレンさんの動画で「タイ風鶏団子のココナッツミルクスープ」を作ってみました。ニューヨークタイムズのレシピですごく流行ったレシピだそうです。ミンチチキンに生姜、にんにく、チリフレーク(わたしはフレッシュのチリを混ぜて見ました)、シャンツァイ、ニョクマム、塩胡椒をして団子にしてフライパンで焼き、外側が焼けた鶏団子を取り出したフライパンで生姜とニンニクを炒めてからチキンスープ、ココナッツミルク、鶏団子、塩胡椒、ニョクマム、砂糖で味をつける、というものですが、わたしはコブみかんの葉やレモングラスも鶏団子にもスープにも加えて、タイの緑豆春雨も少し加えてみました。お野菜はほうれん草を加えておられましたが、わたしはズッキーニとスナップエンドウを使ってみました。スープはタイのトムカーガイのような感じのスープですね。もう少しスパイシーにすれば良かったなと思いますが、美味しく出来ました。(最後のライム汁を加えるのを忘れてしまいました。)
Today’s dinner was “Thai Coconut Milk Soup” from Karen Kirishima on Youtube. Apparently the recipe was featured in the New York Times and went viral. You mix minced chicken, ginger, garlic, chilli flakes (I used fresh chilli), coriander, fish sauce, salt & pepper, to make meatballs (I made them much smaller than the original recipe) and brown them all over in a frying pan before taking them out. In the same frying pan you stir-fry garlic and ginger, add soup stock, coconut milk, then return the chicken balls and add salt, pepper, fish sauce & sugar. I added kafir lime leaves & lemon grass in both the chicken balls and the soup and also added some Thai vermicelli. For vegetables, the recipe uses spinach but I used courgette and sugar snap peas. It’s actually similar to Tom Ka Gai. I wish I had added more chilli but it was very tasty and we enjoyed it. (I forgot to add lime juice at the end.)
