West African Style Air Fryer Beef Skewers (Hello Fresh)

The dinner on Thursday was “West African Style Air Fryer Beef Skewers with Spiced Tomato Bulgur, Red Cabbage Slaw and Aioli” from Hello Fresh.  Recently, they started having air-fryer recipes, I guess it means that an air-fryer is now commonly used in that many households.  Comparing to the ovens in Japan, they are bigger here (although not as large as in the US in general) so I think they seem very convenient as they are smaller and more powerful.

You mix West African style seasoning, bread crumbs, salt, water & pepper with mince beef, make kofta shape and put on skewers and bake for about 10 minutes.  You stir-fry tomato puree, West African style seasonings & bulgur together in a pan for 30 seconds, add chiken stock paste & water, let it come to the boil, simmer for 1 minute, put the heat off, put the lid on and leave it until other elements are done.   I find cabbage in England very tough so I salted shredded red cabbage, massaged it and let it for a little while to make it more tender (it’s not in their recipe), then mixed with tomatoes and aioli – I used only a small amount of aioli with a splash of vinegar to make it lighter as I would have found it too heavy if I used all the aioli that was included.

After plating them, drizzle a little tamarind chutney and it’s done.  We enjoyed it very much.
