Korean/Japanese Style Cold Noodles

予報通り、今日はまた暑くなり29度くらいまで上がりました。明日は25度、その先数日は24、5度ですがまた27、8度に上がる予報です、そろそろ涼しくなって欲しい。暑さがおさまったら寒くなって雨ばかり、なんてことになりませんように。

As expected, it got hot again, around 29C.  It’s expected to get cooler tomorrow, down to 25C, and about the same for the next few days but then it’s expected to get up to 27C or 28C, again. I  would love to have some cooler days.

暑いのでまたガスパチョと思ったのですが、ミニトマトがあまり残っていなかったので、冷たい麺にしました。どなたかのYouTubeで納豆やキムチをのせた冷たい麺を見かけたので(どなただったか忘れてしまいました)、似たような感じのものを作ってみました。タレは、その動画では醤油1、酢1、胡麻油少しとありましたが、1:1だとお醤油が強かったのでお酢を足しました。そこにニンニクのすりおろしを少し、蜂蜜少し、そしてコチュジャンも加えて韓国風に。

As it’s so warm we thought about making Gazpacho but we didn’t have enough mini tomatoes, so I made cold noodles instead.  I saw someone making cold noodles with Natto & Kimchee on Youtube (I forgot which youtube video), which gave me the inspiration and I made something similar.  On the youtube video I watched the lady was making the sauce with soy sauce 1, vinegar 1 with a little sesame oil and I tried that but found it a little too salty so added more vinegar, then also added a little honey and some Gochujan paste.

醤油 大さじ2
お酢 大さじ3
にんにく すり下ろし少し
蜂蜜 小さじ1くらい
コチュジャン 小さじ2くらい
すり胡麻 たっぷり

胡麻油を忘れてしまいましたが、入れると美味しい更にと思います。

2 Tbsp Soy Sauce
2 Tbsp Rice Vinegar
a little grated garlic
1 tsp Honey
2 tsp Gochujan
a lot of ground sesame seeds

I forgot to add sesame oil but it would have added more flavour.

 

具は、納豆、キムチの他に家にあったきゅうり、枝豆、トマトを加えて青ネギとすりごまを最後にのせて出来上がり。オクラとかも良さそうですし、韓国海苔を載せても美味しそう。麺は妹に送ってもらったゼンブヌードルという黄えんどう豆100%出来ている麺を使いました。普通のパスタソースだと少し香りが気になったり食感が物足らなかったりしますが、冷たい麺でしっかりした味のソースだと食感が良く豆の香りも気になりません。温かいパスタの時は6分茹でてさっとお湯で洗ってからソースを作ったフライパンに加えて和えていますが、今日のように冷たい麺の時は7分茹でて冷たいお水で洗って使っています。シコシコして、とても美味しいです。お蕎麦でも良さそうですし、細めの普通のパスタでも美味しいと思います。タレも美味しかったし、納豆も美味しかった。居酒屋さんにありそうね、あったら絶対リピートしてオーダーするよね、と言いながらいただきました。以前はロングパスタも冷たい麺もあまり好きではなかった夫も、とても美味しいと食べてくれていました。

The toppings were Natto, Kimchee, Cucumber, Edamame, Tomato then green onion and extra ground sesame seeds.  Okra would have been good and Korean seasoned seaweed would have been great, too.  I used Zenb noodles, which are made of yellow peas (100%), which my sister sent to me from Japan.  It does smell of peas and can be a little off putting depending on the sauce and the texture isn’t quite like real long pasta but I find it works great for cold pasta like today.  When I use it with warm sauce, I would cook it for 6 minutes, rinse it under hot water before adding it to a frying pan with the sauce, but when I use it cold like today I cook for 7 minutes, rinse it under cold water until completely cool before plating it.  There is a little bite and the smell of peas disappears with a strong sauce like today and it was delicious.  Soba would work and thin Italian pasta should work, too.  My husband didn’t used to enjoy long pasta or cold pasta but he really enjoyed it today, I’m happy to say.  We thought it was something you may find in a little Izakaya in Japan and we would definitely order it again (and again!)
