Baked Polish Sausage & Sauerkraut and Kale


Today’s dinner was Baked Polish Sausages & Sauerkraut.  When I made this a couple of weeks ago, I used about a half of a jar of Sauerkraut so I wanted to use the rest, if I leave it too long I’ll forget about it completely and end up throwing it away a few months later.  The side dishes were some boiled potato and steam-fried kale & spinach.  When I cooked kale before I quickly sauteed it following someone’s recipe but I didn’t like it at all, I didn’t enjoy the texture and didn’t enjoy the taste.  This time I cooked it more slowly – sauteed sliced garlic and chilli flakes in olive oil slowly then added the kale, some water, covered it with a lid.  I stirred it now and again, added some some more water and repeated until my husband got home and was ready for dinner. I guess I cooked it for about 15 minutes or so.  I also added some left-over Japanese spinach in the last minute.  It was very tasty, I think cooking it longer brings out more taste of the kale.


Although kale has been regarded superfood for many years, I also read some information saying it can be very bad for you if you eat it raw because it’s very hard to digest for your stomach and there is some property that can give a few other problems.  I don’t like it raw anyway, so I’ll stick to steam-frying it.
