Tomato Soup and Goat Cheese & Pear Salad

Christmas has gone while we were in Thailand, but we are having our Christmas tomorrow.  My husband will cook Christmas lunch as always (roast turkey, roast potatoes, parsnips, the whole thing) tomorrow.  As it is a very important event for us, I made a list of ingredients we need and got what we could before we left and we just had to buy some sausages, but we had completely forgotten about tonight’s dinner.

When we were in the taxi coming back from the airport, my husband asked what we were going to have for dinner and I told him I’d forgotten to plan it but suggested soup & salad as we’ll be having a big meal tomorrow.  My husband agreed and asked me if I can make the cumin scented tomato soup and goat cheese salad – so that’s what I made.

The table wreath was looking quite miserable.  The roses had gone long ago and most of the greens were also gone, so I used the branches I was using to decorate the coffee table to refresh the wreath and added some baubles.  It makes the table very festive so I wanted it for tomorrow’s lunch.   Many people (specially Japanese) find it strange to see Christmas decorations now that Christmas has gone but we tend to keep them until the 6th January.

My husband has always cooked Christmas lunch since we got married but I started making the stuffing for the turkey about 10 years or so ago.  I prefer American stuffing to English stuffing so it’s better that I make it.  My husband will need it tomorrow very early so I just made it.  It tastes good as it is, so I couldn’t help eating some telling myself that I was just tasting to check if the seasoning is right.
