Pork With Zucchini


Today’s dinner was Pork With Zucchini & Tomato.  It’s very easy to make and very tasty, so I’ve made it a few times – I wrote the recipe here.  After browning the pork shoulder pieces, you add tinned tomato, water, soup stock cube, zucchini, onion, red or/and yellow pepper, tobanjan & soy sauce.  I used 1kg of pork shoulder, 2 pepper, 2 large zucchini, 1 large onion.  1kg seems a lot but the pork becomes very tender and the sauce isn’t heavy so you can eat quite a lot, 1kg is I would say for about 5 people.  (I freeze the rest.)


I use a Staub casserole for slow cooking so the moisture doesn’t evaporate much and also I tend to put in a lot of zucchini (very large ones as it’s not easy to get small ones here), so I found in the past that this can be a little watery when the pork is cooked well, so I used less water (1 tin rather than 1.5 tin) and cooked it without the lid at first and also at the end for a while and the sauce had just right thickness.  I did add the vegetables a little after I started cooking the pork but they seem to have melted, I should add them about 30 minutes after I start cooking pork.  Anyway, it was very good.

I can only imagine how soft-spoken you are, and how elegant you look 🙂 I can’t imagine how would be to have such a highly sensitive palate though, even though I would consider myself quite knowledgable about food and cuisines, but without the refined tastebuds like yours 🙂

      Thank you very much for your kind comment, but you would probably be disappointed if you meet me …:). Not sure about “a highly sensitive palate” either but I seem to have sensitive sense of smell.
