Today’s dinner was Spaghetti Amatriciana.  I love this sort of simple pasta the best.  I know you are not supposed to use garlic or onion but they are often used in restaurants and I feel they add flavour so I did use them.  Although you are supposed to use Guanciale for Amatriciana and Carbonara, it’s not easy to get it here in Singapore.  I used to buy a block of pancetta in a butcher but one day it was so gamy I couldn’t eat it, so I now use ordinary bacon.  I thought I’d bought a block of bacon today but when I opened the package it was actually thickly sliced – such a shame as it makes quite a big difference to the flavour.  It was still enjoyable enough.
