Chicken, Avocado & Mango Salad


Today’s dinner was Chicken, Avocado & Mango Salad, one of the meals I cook often (but maybe it’s been a while since I made it last?). I marinade chicken breast in lemon juice, garlic & olive oil, then brown both sides before cooking it through in the oven. The salad also has salad leaves, mint, coriander and dry-roasted sliced almonds on top. I used raspberry vinegar, lemon juice, honey, olive olive oil, salt & pepper for the dressing.


I also cooked tomorrow’s dinner, so I won’t have much to do tomorrow!
