Thai Veggie Curry


As we needed to get some things, we went out in the afternoon to do some shopping.  It was a beautiful day, very sunny and warm enough to walk with just a long sleeve shirt on without any jacket or cardigan.  We saw more colourful flowers like rhododendron, more than the last time, very beautiful.

今日の夕食は、Hello Fresh の 「Thai Veggie Curry」(タイ風野菜カレー)。お野菜はナス、グリーンのパプリカ、パクチョイ(夫が大嫌いなお野菜)、さやいんげん。味付けはナスにオイルと一緒にかけてローストするタイスパイスブレンドとイエローカレーペースト、お醤油、ライム汁とライムの皮の擦り下ろし。いつものようにココナッツミルクたっぷりのレシプですが、わたしはお湯を多めに足します。スパイスミックスは結構辛味があったので、これまでの Hello Fresh のものより辛めな気がしました。

Today’s dinner was “Thai Veggie Curry” from Hello Fresh.  The vegetables are aubergine, green pepper, Bok Choi (my husband hates this), and mangetout.  The seasonings are Thai spice blend that goes on the aubergine with oil for roasting, yellow curry paste, soy sauce, lime juice & lime zest.  A lot of coconut milk goes in but I add extra hot water.  The Thai spice was spicy so it had a kick to it, more than Hello Fresh’s usual.
