Ribollita (Tuscan Bean & Bread Soup)




It was another cold day, but it looks like it’ll get warmer tomorrow though the weather isn’t going to be very good, some rain is expected soon.

Today’s dinner was Ribollita (Tuscan bean & bread soup), which is almost like vegetable, beans and bread stew, a very thick soup.  We used Haricot beans instead of cannellini beans and sweetheart cabbage instead of cavolo nero but the rough recipe is in my previous blog post.   A lot of good olive oil is added before you eat.
