When we cooked Pho a few days ago, we used 2 chicken legs for making the soup stock. We did also use some of the chicken in the spring rolls but there was still quite a lot left and we felt we should eat it, so we made a salad with it and had it for our evening meal. The salad has chicken, gem lettuce, celery, grapes, and raisins. The dressing is the same as this recipe that we made sometime ago.
Now when we start having dinner it is still quite light outside but not light enough not to have to use the lights indoors so the colours of photos get a little strange.
