French Patisserie Lesson / Croquant

今日は午後一番に、ズームによる今月のフランス菓子教室(Ecole de Patisserie Chez Haru)のレッスンでした。今日教えていただいたのは、

  • Mangue Coco (マンゴーとココナッツのムースケーキ)
  • Les Croquants a la noix de coco (ココナッツのクッキー)

I took a French Baking Class of  Ecole de Patisserie Chez Haru this afternoon.  We made 2 items.

  • Mango & Coconut Mousse Cake
  • Coconut Croquants


However, we are invited to lunch to at our friends tomorrow and we told them we’ll take cake so we are taking the Mango & Coconut Mousse Cake. Now it’s still in the freezer and I will be decorating it tomorrow morning, so I cannot blog it until tomorrow.


These are Coconut Croquants, easy to bake.  We were told that we should bake them until they are quite dark brown, just before they start burning.  On the photo they look a lighter colour than the actual ones.  They are nice and crisp and delicious.  As they are easy to bake I’m sure I’ll be baking them but perhaps I’ll wait until it’s not so humid.  We’ve been having quite a lot of showers although it’s been sunny yesterday and today and the humidity is quite high, so they became less crispy quite quickly today.   We didn’t want to keep them as they’ll get soggy so we had them all – not a difficult job as they are so light.





I had a migraine yesterday.  It wasn’t as bad as it could be and I was OK this morning so I was relieved, but it came back around lunch time again.  I took painkillers as soon as I noticed but I wasn’t feeling well in the first part of the class so my brain wasn’t working very well and everything seemed like a big effort.  When I get a migraine, it tends to linger for a few days, I hope it’ll be gone tomorrow.
