Cottage Pie


Today’s dinner was Cottage Pie.  There are many different versions, I’m sure, but we usually use onion, carrot, celery, garlic, minced beef, and tinned tomatoes with some herbs (bay leaves and thyme today) to make the filling like a ragu, and top it with mashed potatoes, then a little pizza cheese (we didn’t have any so we used Pecorino Romano today).  We both love the crispy bits.  We used more mashed potatoes today so 2/3 was enough to fill us up so we’ll have the rest tomorrow for dinner again.  If we plan to have this sort of leftovers a few days later we often forget, and if we freeze it it’s even more likely to be forgotten, so we’ll have it straight away.
