Soup & Salad


Today’s dinner was Soup & Salad.  Soup is Cumin Scented Tomato Soup with lots of garlic.  Salad is my favourite – chicken, avocado & mango.








It’s almost impossible to get an avocado that is ripe and ready to eat “now” in Singapore so I buy some when I don’t need them and let them get ripe at home.  It’s still not easy to have them at the right timing, it’s been specially hard in the last few months to get good ones.  However, today’s avocado was very good, that special sort of sticky texture and quite strong flavour.  I don’t know, though, why it’s so hard to get good ones here.  Anyway, it was very good today.  It goes well with the rest of the ingrediants that I use in this salad – chicken marinaded in lemon juice and garlic, mango, mint, coriander leaves and toasted sliced almonds.  (I also added 1 slice of Parma ham left in the fridge.)
