Chicken & Mashed Potato with Cream & Horseradish Sauce

今日の夕食は、チキンの胸肉の西洋ワサビ(ホースラディッシュ)入りクリームソースとマッシュポテト。添え野菜は、人参と芽キャベツ。人参は茹でただけですが、芽キャベツはいつものようにニンニクと一緒に蒸し炒めにしています。カロリーが高そうなので頻繁には作りませんが、あまり乳製品が得意ではないわたしも大好きな1品です。(詳しくは、以前の記事をご覧ください。)当時香港にお住まいだったお友達のお家に泊めていただいたときにご馳走になったもので、Australian Woman’s Weekly の料理本からのレシピです。元のレシピはほうれん草の上にのせるのですが、わたしはいつもお友達が出してくださったときのようにマッシュポテトの上にのせて、お野菜を別に添えています。ソースがマッシュポテトにとても良く合います。

Today’s dinner was Chicken with Creamy Horseradish, using a recipe from Australian Women’s Weekly.

I made some changes to the original recipe (more in detail in my past post).  As I wrote before I like this with mashed potato like my friend served at her place in Hong Kong when she lived there and I stayed with her, I feel the sauce goes with the mashed potato so well.  I also love the dill here.  I’m not a big fan of dairy so don’t often have cream sauce,  but I do love this sauce, the horseradish sort of makes it lighter than it is.









Whenever I make a bouquet at the flower class, I always love the look of our dining room, it’s so lovely to have flowers other than the boring (sorry, but they are to us) old orchids.  However, I know this beautiful bouquet will be beautiful only for 1 or 2 days because the peonies will die quickly even though I keep the aircon on most of the day.  The last large bouquet I made last week lasted only 2 days, too, because lilacs and viburnum died quickly.  Viburnum can last a week but sometimes they wilt quickly. I love fresh flowers because they don’t last forever, but I would love them more if they can last at least a week, especially as these are quite expensive.

ちなみに、今日は夫が食事のときに「Nice table!」と言っていましたが、綺麗なお花があるとテーブルセッティングもそれに合わせて整える気持ちになれます。香港ではもっと頻繁にテーブルセッティングを変えていたのですが、シンガポールに来てからはお花がずっと同じなので(お花の色に合わせてテーブルクロスを選び、テーブルクロスに合わせて食器を選ぶので)テーブルも数種類のローテーションになってしまい、テーブルセッティングに対する気持ちも盛り上がらず、同じ様なセッティングばかりです。

My husband said “Nice Table!” today.  When there is a nice flower arrangement on the table I do try to set the table nicely.  The way I do the table is choose a table cloth that goes with flowers, candles etc then decide the plates.  In Hong Kong I was able to buy nice flowers often so I also changed the table setting often according to the flowers but here it’s almost always orchids so I don’t feel there is a lot of choices for the table settings.
