Middle Eastern Style Beef Stew with Charred Courgettes, Couscous and Feta


It was nice and sunny but the temperature isn’t so high, it seemed a little chilly to sit in the garden.  We hadn’t seen little birds for a few days but we did see some today.  Strangely, they disappear for a week or two at a time now and again, then come back.  We have changed the feeders or the feeds a couple of times, I don’t know if that was the reason or it’s just the weather.

今日の夕食は、Hello Fresh の「Middle Eastern Style Beef Stew with Charred Courgettes, Couscous and Feta 」(中近東風ビーフシチューとグリルしたズッキーニ、クスクス、フェタチーズ)でした。

Today’s dinner was “Middle Eastern Style Beef Stew with Charred Courgettes, Couscous and Feta” from Hello Fresh.


Stir-fry mince beef for a few minutes, then add red pepper and continue stir-frying, then add Chemoula Spice and cook for a minute, then add chopped tomato with onion and garlic from a pack, let it come to the boil, reduce the heat and cook it for 15 to 20 minutes.  I cook couscous differently from the recipe.  I added lemon zest and salt & pepper to couscous, poured the same amount of boiling water over the couscous, cover it for 10 minutes then fluff it up.  Zucchini was cooked in a hot pan (no oil) just to char both sides.  Plate the couscous, pour the stew over, put on slices of zucchini, scatter feta cheese (not for me) and serve it with lemon.  Although it’s not in the recipe, we scattered some coriander leaves over as well.









I guess they use a pack of “chopped tomatoes with onion and garlic” rather than using fresh onion and garlic, but I feel these tomatoes are so acidic (I actually added some sugar but it was still quite sour) so I think it’s better to sauté onion and garlic then use the tomatoes.  The vegetables will add some sweetness and some extra flavour.



The roses on the table are from next door’s garden, they are climbing over the fence between us so we asked them if they minded us cutting some and they told us they don’t mind it at all, they have to cut it shorter anyway so we can take as much as we like.  Sadly it looks like it’s almost at the end.
