Black Bean Soup & Ploughman’s

It’s been windy and wet, a typical winter in England, I guess.  It snowed in quite a large area including just a little north of London, but no snow at all here.

We decided to have a Ploughman’s for dinner but also had a small cup of Black Bean Soup.  I learned this Black Bean Soup at a cooking class in Singapore and I have made it so often I almost got a bit tired of it.  Since I found Jamie Oliver’s Costa Rican Black Bean soup, I tend to use that recipe when we have soup as a main because it has lots of vegetables, but this simple one is so quick and easy and delicious we have it as a starter.

Today’s Ploughman’s was Serrano Ham, tomatoes, celery, fig, sausage rolls, quinoa burgers, pear, 3 cheeses (Blue Shropshire, mature cheddar and also brie that we remembered after taking the photos), Branston Pickles and rocket leaves.  No photos but we had bread and also a bottle of Rose.

We were so full!
