Chicken In Olives & Tomato


Today’s dinner was Chicken In Olives & Tomatoes.  When we cooked this last time I wrote a rough recipe.  The last time it was on the salty side so this time I used less olives, but it’s the black olives that give it oomph so it’s not very good if you don’t use enough.  It came out good today.  We usually have it with rice that we cook with onion and carrot but we had only a very short and thin carrot in the fridge, which we used for the base of the chicken dish so just white rice.  Side dish is green beans steam/stir-fried with garlic.
