Vegetable Curry


We were planning to have roast pork tonight but we’d forgotten that we need to start preparing for it early as it takes a long time.  By the time we remembered it was too late to cook something that takes nearly 3 hours including the time for the pork to come to room temperature.  So, change of plan – Japanese vegetable curry today.  We would either cook curry or Chilli Con Carne when we are pressed to come up with something easy to make.


I sautee cumin seeds, add chopped onion, garlic and ginger and cook until the onion is very sweet, add spices, cook a bit longer, add tomatoes (I used Passata today) and cook a few more minutes.  Add water, then vegetables – hard ones first.  Today we used carrot, potato, butternut squash and onion (sliced).  It came out very good.
