Cold Pasta With Tomatoes & Olives


It was another hot day.  The highest temperature was about 30C and the humidity was 55 %, so comparing to Japan it’s not that hot but the trouble is it’s so hot inside the house.  I come into my craft room to cool down when I get hot while I cook or wash the dishes.


Today’s dinner was cold pasta.  I don’t think it’s eaten in England but I love it when it’s hot, but my husband, who is English, doesn’t seem to enjoy it so much so we don’t have it often, just a few times in one summer.  Having said that, he told me today that he is getting to like it.


Just chop various colour and shape of tomatoes, added chopped olives, caper, basil, grated garlic, lemon juice, salt, pepper & delicious olive oil then put cooked pasta (not al dente, cook a little longer than usual then “wash” it in cold water) and mix all together well, then taste and adjust lemon juice, olive oil, salt & pepper.  It was very refreshing and tasty.  I would have prefered to use pasta that you cook for 5 minutes but these are cooked for 10 minutes, I think thinner ones work better for cold pasta.
