Chicken Laksa??


Today’s dinner was a Chicken Laksa -ish thing.  It’s far from authentic Chicken Laksa, though.  I don’t know if such a thing as Chicken Laksa exists, at least in Singapore Laksa was always seafood.  However, back when we were getting “Hello Fresh”, one of the things we used to get was Chicken Laksa and my husband used to love it.  It uses red curry paste, peanut butter and coconut milk.   I saw someone cooking something similar on Youtube, although it had Indian base and was vegetarian, and I thought we could cook something similar with chicken.  I kind of mixed both, made Indian base with Indian spices, added Thai Red Curry Paste, added onion, red pepper, chicken, coconut milk and peanut butter.


The red curry paste you can buy from supermarket here doesn’t taste like proper Thai, it’s quite acidic, not very salty, not spicy, so it doesn’t seem to add much.  The result was, I guess, so-so.  I thought something was missing but it wasn’t bad.  However it was quite heavy with coconut milk so next time I would use some soup stock as well.
