今日は、今月のZoomによる「Ecole Chez Haru」のフランス菓子教室でした。
I took “Ecole Chez Haru”, a French Patisserie lesson, on Zoom today.
今日教えていただいたのは、
*Tarte Tatin(タルトタタン)
*Financiers A L’Orange (オレンジ風味のフィナンシェ)(米粉入り)
This month’s lesson were to bake :
- Tarte Tatin (Apple Tart)
- Financiers A L’Orange (Orange Flavoured Financier)(with rice flour)
前日に作ったタルトタタン用の生地の水分がなぜか足りなくてパサパサで、先生にご相談して少しお水を足してやっとまとまるという事件がありましたが、準備も今日の本番も今回は比較的楽で2時間半くらいで終わりました(ただ、あとは焼けるのを待つだけの状態でレッスンが終わってから焼きました。でも、来月は大変だそうです〜。先生が大変とおっしゃる時は、4時間くらいかかるのです。
When I made the dough for the Tarte Tatin last night (you need to make it at least 2 hours before using), there wasn’t enough moisture and I struggled. After talking to the teacher I added a little more water and it did go together eventually but it was a bit difficult. Other than that, it was an easier lesson than many, the preparation didn’t take too long and the actual lesson was about 2 and a half hours. Sometimes they go for 4 hours, which might be the case next month because the teacher warned us that it’s going to be a hard one. (We did continue with baking after the class because the tart was in the oven and the financier was waiting to go in the oven when the lesson finished, there was no point for our teacher to wait so we finished it.)
オレンジ風味のフィナンシェ。ミニマフィン型で焼きます。焦げる寸前まで焼いているので外側は少しキャラメライズされてカリカリ、むっちりで中はふんわり、オレンジとグランマニエの香りがふんわりとしてとても美味しい。あっという間に食べてしまいました。
Orange flavoured Financier baked in mini muffin tin. As they are baked to the point just before they burn, the outside has some caramelisation and is crispy & chewy while the inside is soft, and when you bite into one you get the aroma of orange and Grand Manier. We ate them all very quickly after dinner.





タルトタタンはしっかり冷蔵庫で冷やしてからでなくては出せないので、明日いただきます。
Tarte Tatin needs to sit in the fridge for several hours before being turned over, so we’ll have that tomorrow.
