Harira (Moroccan Soup)

今日は、夫の電話会議があり遅い時間からのスタートで、時間もはっきり読めなかったのでさっと温めて出せるスープにすることに。どのスープが良いか夫に聞いてみて、モロッコのスープにしました。ハリラと言ってラマダンの断食明けにいただくスープだそうです。玉ねぎ、セロリ、ひよこ豆、レンティルをトマトとチキンストックとスパイス類で煮ています。本来はチキンやラムを入れますが、うちではチキンストックは使いますがお肉そのものは使わず野菜と豆類だけのスープです。パスタを入れても良いですが、今回は入れず。最後にサラダ用のほうれん草、パセリ、シャンツァイを入れています。

My husband had to be on a telephone conference this evening so we had to have dinner later than usual and we didn’t know exactly what time we can start our dinner, so I made soup that I can quickly warm up when he finishes his conference.  I gave my husband a few choices of soup and he wanted Moroccan so that’s what I made.  It’s mainly onion, celery, chickpeas and lentil with some tin tomatoes, soup stock and spices.  The original recipe uses chicken or lamb but I just use chicken stock without using actual meat, so it’s almost vegetarian.  I could use vegetable stock but I feel chicken stock gives deeper flavour.  You can add some pasta but I didn’t, I just added some salad spinach, parsley and coriander leaves at the end.
