Sausage & Roasted Vegetables



We bought too many sausages for Christmas Dinner.  As we had guests, we didn’t want to serve too little and ended up buying too much of everything.  We bought sausages about a week before Christmas as we didn’t want to turn up in a Butcher and find sausages (chipolata) out of stock, so we froze them and defrosted on the day before.  This means we cannot freeze them again unless we cook them, so we decided to have them for dinner.  We are going away on the day after tomorrow, so we didn’t buy anything and have left-over.

So, our dinner tonight was a little strange – sausages, Brussel’s sprouts and parsnip all roasted.
