Herby Chicken (with Red Onion Mash and Garlicky Beans)

今日も暑くなって結局32度まで上がりました。食欲も減るしお料理するとますます暑くなる夫とふたりで「お料理したくない〜。」と言いながらのお料理。今日のディナーは、「Herby Chicken (with Red Onion Mash and Garlicky Beans)」(ハーブたっぷりのチキン、赤タマネギ入りマッシュポテトとガーリックを効かせたインゲン)でした。以前オーダーした時に美味しかったので。

チキンは塩胡椒をしてマヨネーズを上にのせてパン粉とパセリとオリーブオイルを混ぜたものをのせて、200度のオーブンで25分から30分焼きます。ポテトは茹でてマッシュして炒めた赤タマネギを混ぜます。インゲンはニンニクと炒めて塩胡椒してお水を少し足して蓋をして、蒸し炒めにしてからバルサミコ酢とオリーブオイルを混ぜます。わたしたちは少しだけ人参も添えました。とても美味しかったです。マッシュポテトは食べきれなかったので、明日、ポテトサラダにしてサンドイッチにします。

It ended up quite hot and went up to 32C after all.  We sort of lost our appetite and were so hot that we were saying “I don’t want to cook….!”.  If it were easy to get some food delivery we might’ve done that but there’s no delivery around here, we would have to go and pick it up.

Today’s dinner was “Herby Chicken (with Red Onion Mash and Garlicky Beans)”, we’ve had this before and liked it.

You put some salt and pepper on the chicken breast, coat it with mayonnaise then put some mixture of bread crumb, parsley and olive oil on top and cook it in the oven at 200C for 25 – 30 minutes.  You boil potatoes, mash them and mix with sauteed red onion.  You sautee green beans with garlic, then salt & pepper, a splash of water, put the lid on the frying pan and cook them until done, add balsamic vinegar and olive oil. We also added some carrot on the side.   The chicken was very tender and very good.  There is some mashed potato left so we’ll make potato salad and use it for sandwiches tomorrow.
