Chorizo, Potato, Poached Egg, Balsamic Vinegar Salad


Today’s dinner was Chorizo, Potato, Poached Egg & Balsamic Vinegar Salad.  I’ve written about it in detail before, so please see this post if you are interested in how to make it.  However, today, I fried potato in one frying pan, chorizo in another frying pan and onion, pepper & garlic in another rather than using just one frying pan, it was easier.  I added balscamic vinegar in the frying pan I sauteed chorizo slices after taking them out and let it bubble a little to make the dressing.


I find making poached eggs a bit of a pain, so I tried a new method that I saw on Youtube – put an egg in a cup you can use in the microwave, poke the yolk with a stick, add a little water and microwave it for 45 seconds.  I put too much water in and thought the white wasn’t ready and so cooked a little longer than I should have, so they were sadly over cooked, but hopefully I’ll do better next time.  It was still very tasty.
